I am in the process of converting my Mitutoyo Millstar equipped 2 axis mill. The current setup uses Mitutoyo AT100 series linear encoders.
According to Mitutoyo the encoders put out a 2 volt peak to peak sine wave quadrature signal on 2 wires (plus ground).
There is no mention of a differential signal in the Mitutoyo literature. Will these encoders work when connected directly to KFlop ?

No those are analog signals not digital incremental quadrature signals.
For compatible encoders types see:

There are converter modules that can do a conversion and also interpolate.
Heidenhain is a popular brand, but I think they expect the more common 1Vpp signals.
