Is the dogleg type path the only setting on G0's, it causes a different path than my CAM shows and has caused a few close calls with clamping.

Yes that is currently the only option. Rapids (G0) move all the axes independently at their max allowed Velocity, Acceleration, and Jerk using a 3rd order motion profile which can be substantially faster and smoother than 2nd order coordinated motion. But yes that will likely not result in a straight line. You might consider changing them to G1 commands with a high feedrate.
